Chipped Beef on Toast (SOS)
Ingredients: 4 Tbsp. butter
4 Tbsp. flour
Dash pepper
2 dashes paprika
2 cups milk
1 jar dried beef
1 can corn
sliced bread
Preparation: Rinse and drain the meat in the jar with warm water 3 or 4 times to remove excess salt and to soften the meat. Drain the meat and lay on a paper towel to absorb excess moisture. Cut the meat into strips.
Melt butter in a heavy saucepan over very low heat. Add the flour, pepper, and paprika. Stir constantly until blended and smooth. Slowly add the milk, whisking constantly to avoid lumps. Cook, stirring constantly, until smooth and thickened. Stir the meat and corn into the cream sauce and heat until warm. Serve cream sauce over toasted bread.
