Mushroom Ravioli with Creamy Marsala Sauce
Ingredients: 1 lb. mushroom ravioli (recipe here: http://www.chefrousseau.net/rec_detail.php?rid=943 or store bought)
1 1⁄2 cups dry marsala wine
1 1⁄3 cups heavy cream
1⁄8 cup milk
1 tablespoon olive oil
3 cups sliced mushrooms
1⁄8 cup diced onion (optional)
salt and pepper
Preparation: Heat a large skillet with the olive oil. Add onions and mushrooms and sauté until tender, about 3 minutes. Add the Marsala wine and bring to a boil. Reduce wine about half, adding salt and pepper to taste. Stir in cream, reduce by half again.
When you add the cream, fill a large pot with about 4 quarts of water. Set the burner to high and boil. Cook ravioli per package, stirring occasionally (very gently). The ravioli are done when they float to the top of the water.
