Cajun Crawfish Pasta     

Ingredients:
1/2 lb penne pasta
6 tablespoons butter
6 cloves minced garlic
Cajun seasoning to taste
1⁄2 cup dry white wine
2 cups heavy cream
12 oz. Louisiana crawfish tails
1⁄4 cup chopped green onion
1/2 cup grated parmesan cheese

Preparation:
Cook the pasta in a large pot of boiling salted water until al dente, according to package directions. Drain, cover to keep warm.

In a large saute pan or skillet, melt the butter over medium heat. Add the garlic and seasoning and stir for 1 minute. Add the white wine and cook over high heat until reduced by half. Add the cream, stirring occasionally until slightly reduced and thickened. Add the crawfish tails, stirring to warm through. Remove from the heat and add cheese. Stir until cheese is melted and the sauce thickens slightly. Stir in green onions. Pour over pasta and top with extra cheese.
