Mediterranean Chicken (or Salmon) Salad     

Ingredients:
Marinade/Dressing:
1/4 cup red wine vinegar
1/4 cup olive oil
1 teaspoon Dijon mustard
1 clove garlic
1 teaspoon salt
1/2 teaspoon pepper
2-3 teaspoon agave, to taste
4 skinless, boneless chicken thighs or breasts or skinless salmon fillets

Salad:
4 cups Romaine lettuce leaves, washed and dried
1 large cucumber, diced
2 Roma tomatoes, diced
1 red onion, sliced
1 avocado, sliced
⅓ cup pitted Kalamata olives, sliced
1/2 cup crumbled feta

Preparation:
Whisk together all of the marinade/dressing ingredients. Reserve half the mixture for dressing.

Marinate chicken for 1-2 hours.

Meanwhile, prepare all of the salad ingredients and mix in a large salad bowl.

If using salmon, coat with marinade. Grill chicken or salmon until completely cooked through.

Allow chicken to rest for 5 minutes; slice and arrange over salad.

Drizzle salad with the remaining dressing.
