Pineapple Teriyaki Burger     

Ingredients:
For the Burger:
canned pineapple slices
3/4 cup teriyaki sauce
1 1/2 pounds ground beef
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 large yellow onion, sliced
4 slices Swiss cheese
4 brioche buns
4 green leaf lettuce leaves

For The Sauce:
1/2 cup mayonnaise
2 tablespoons teriyaki sauce
1 tablespoon honey
couple dashes hot sauce

Preparation:
Drain the pineapple slices, reserving juice. Whisk the teriyaki sauce into the juice. Pour about 3 tablespoons of this sauce over the pineapple slices in a dish. Set aside.

In a large bowl, gently mix together the ground beef, black pepper, garlic powder and onion powder. Divide and shape into 4 patties. Place into a shallow baking dish. Pour the remaining pineapple teriyaki sauce over the burgers and allow to marinate for 20 minutes, turning over halfway.

Meanwhile, to make the sauce for the burgers, in a medium bowl, whisk together the mayo, teriyaki sauce, honey and hot sauce until smooth. Cover with plastic wrap and place in the fridge until ready to use. Sauce can be made up to 3 days in advance.

Set a large grill pan over medium high heat. Once hot, spray the pan with nonstick cooking spray and add the onion slices in a single layer. Cook for about 2 to 4 minutes on the first side, or until charred, then flip over and continue to cook for another 2 to 3 minutes on the second side. Transfer to a plate and set aside. Grill the burgers for 6 to 9 minutes per side, or until a thermometer reads 160 degrees F and juices run clear. Place a slice of cheese on top of each and cook until just starting to melt. Transfer to a plate or platter and set aside. Drain pineapple slices from the marinade and grill on each side for about 1 to 2 minutes, or just until slightly charred.

Serve with sweet and spicy teriyaki mayo, lettuce, grilled onions, a burger patty, and a grilled pineapple slice.
