Pork Belly Burnt Ends
Ingredients: 5 lbs. pork belly
3 Tbsp. olive oil
1 cup dry rub
Sauce:
1 cup BBQ sauce
3 Tbsp. butter
2 Tbsp. honey or agave
Preparation: Preheat smoker to 225-250 degrees using fruit wood. Trim excess skin and fat off pork belly, slice into 2 inch cubes and place in large bowl. Add olive oil and dry rub liberally. Place cubes on a wire rack in smoker. Smoke 3 hours until a dark red color and bark develop. Remove cubes from the smoker and place in foil pan with BBQ sauce, butter, and honey. Stir well. Cover pan with foil and place back on smoker. Cook an additional 90 minutes or until internal temperature is 200 degrees. Remove the foil, close smoker, smoke another 15 minutes.
