Zesty Crusted Halibut     

Ingredients:
4 Halibut fillets
1 lemon
olive oil
1 tsp. lemon zest
1 cup panko breadcrumbs
4 tsp. fish seasoning (basil, parsley, tarragon, cayenne)

Preparation:
Preheat oven to 425 degrees. Combine panko, lemon zest, fish seasoning, salt and pepper. In another bowl, whisk 2 tsp. lemon juice with a large drizzle of olive oil. Pat fish dry, place on baking sheet. Brush with lemon juice mixture then gently press crust onto tops of fish. Roast in oven until fish is flaky, 15-20 minutes. Serve with lemon wedges.
