Chicken Satay     

Ingredients:
3 slices ginger, minced
3 cloves garlic, minced
1 Tbsp. curry powder
1 Tbsp. butter, softened
1 tsp. salt
3 Tbsp. light cream
1/2 cup coconut milk, plus more for basting
1 lb. boneless skinless chicken breast, cut in one inch strips

Preparation:
Combine all marinade ingredients in Ziploc bag, knead well. Add chicken, marinate in refrigerator 2 hours. Thread on skewers. Grill, basting with coconut milk.
