Green Noodles
Ingredients: olive oil
1/4 cup diced red onion
5 ounces fresh baby spinach
1 cup packed fresh basil leaves
2 1/2 ounces feta
1/4 cup cream
1/4 cup toasted walnuts or pine nuts
1 garlic clove, chopped
1 1/2 teaspoons lemon juice
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
12 ounces uncooked spaghetti
Preparation: Heat olive oil in a small skillet over medium. Add onion; cook, stirring occasionally, until tender, about 4 minutes. Add spinach & basil to skillet, cook until wilted. Cool slightly then add to a food processor with feta, cream, nuts, garlic, lemon juice, salt, and pepper. Process until smooth, about 1 minute.
Cook spaghetti in salted water according to package directions. Drain, reserving 1/2 cup cooking water. Toss spaghetti with spinach mixture, adding cooking water, 2 tablespoons at a time, until desired consistency is reached.
