Breakfast Egg Casserole     

Ingredients:
9 large eggs
1/2 cup heavy cream
1/2 tsp salt plus extra to taste
1/8 tsp pepper
1 cup grated cheddar cheese
1 tsp. oil
1 cup water

Add In Ideas:
1/3 cup diced red bell pepper
1/2 cup minced yellow onion
3/4-1 cup chopped spinach
2 cloves garlic (minced)
crumbled sausage
green chiles

Preparation:
Spray oven proof dish that fits in pot well with cooking spray, set aside.

Whisk eggs until well incorporated, then whisk in heavy cream. Season with salt and pepper and add cheese. Set aside.

Set Instant Pot to sauté and heat 1 tsp oil. Sauté add ins until tender, turn IP off. Stir into egg mixture and pour into prepared baking dish.

Wipe insert with a paper towel on the inside, then return to your IP and add 1 cup water. Top with a handled trivet and baking dish.

Set to 30 minutes high pressure (38 at altitude) and make sure vent is in the sealed position. Allow a natural pressure release for 10 minutes then quick release.
