Corn Chowder     

Ingredients:
4 bacon strips, diced into small pieces
1 medium onion, diced
1 cup chopped colored bell peppers
3 cups corn kernels
1 tbsp minced garlic
4 gold potatoes, peeled and diced into small cubes
1/2 tsp dried thyme
1/2 tsp smoked paprika
1/4 tsp salt or to taste
1/4 tsp black pepper
3 cups vegetable stock
2 tbsp cornstarch
1 cup half and half or milk
2 cups of shredded sharp cheddar cheese

Preparation:
Press saute button, once its displays hot, add the bacon pieces, and saute until crisp, remove bacon. Pour off bacon grease, leaving a tablespoon or two in the pot. Add onions and garlic, saute until the onions turn translucent. Add bell peppers, cook 2 minutes.

Add corn, potatoes, salt, pepper, paprika, thyme, bay leaves, and broth, mix well. Pressure cook on high for 10 minutes, natural release 5 minutes. Meanwhile, mix the cornstarch with the half-and-half and set it aside.

Press the 'CANCEL' button and turn on the saute button. Once the chowder begins to bubble, add the cornstarch slurry mixture and keep stirring the soup until it thickens.

Press 'CANCEL' to turn off the saute mode. Add 1 cup of shredded cheddar cheese. Mix well until all the cheese has melted. Then add remaining cheese and bacon, stir well.
