Cheesecake Chimichangas     

Ingredients:
4 ounces cream cheese softened
1 tsp. sour cream
2 tsp. powdered sugar
1 tsp. lemon zest
1/2 teaspoon vanilla extract
2 large flour tortillas
1/2 cup cherry pie or blueberry filling or 1/2 cup fresh blueberries
1/4 cup granulated sugar
1 teaspoon ground cinnamon
2 tablespoon unsalted butter melted
Olive oil spray

Preparation:
In a medium bowl mix cream cheese, sour cream, sugar, vanilla, and lemon zest, until it gets creamy and well combined. Stir in fresh blueberries, if using.

Divide the mixture evenly between two tortillas and add it to the lower part of each tortilla. Add blueberry filling to the center of the cream cheese mixture. Fold the sides of each tortilla towards the center and then roll up the tortilla tight into a burrito shape. Secure the end of the tortilla with the toothpick.

Mix together sugar and cinnamon on a plate. Spray each burrito with oil, coating all sides evenly. Roll burrito in sugar cinnamon mix. Preheat the air fryer to 375 degrees F for a minute. Lay the cream cheese-filled burritos onto an air fryer basket/tray, lightly greased or sprayed with oil. Air fry mode (air crisp) for 6 minutes, flipping halfway. Once you flip the burrito to the other side, be sure to brush/spray the other side with oil again.
