Blackberry Balsamic Vinaigrette     

Ingredients:
1 garlic clove, minced
2 Tbsp minced white onion
1 cup blackberry preserves or jam
¼ cup balsamic vinegar
1 tsp fresh thyme
2 tsp Dijon
½ cup olive oil
Sea salt/pepper, to taste

Preparation:
In small saucepan, heat a small amount of oil. Add minced onion and minced garlic. Cook 45 seconds. Add preserves and balsamic vinegar. Cook for 1 minute, stirring constantly. Transfer to a blender. Blend until smooth. Add thyme and Dijon. Blend until smooth. Slowly add olive oil and blend until smooth. Season with salt and pepper. Keeps in the refrigerator up to 3 weeks.
