Mediterranean Orzo     

Ingredients:
1 1/4 cups orzo pasta
2 Tbsp. oil
1 pork tenderloin (about 1 pound)
1 cup grape tomatoes, sliced in half
4 oz. Garlic & Herb or Mediterranean Herb feta cheese
1 6 oz. bag baby spinach
1/4 tsp. salt

Preparation:
Cook orzo in boiling salted water 8 minutes or until tender.

Meanwhile, in large skillet, heat oil over medium-high heat. Cut pork in 1 inch chunks; add to skillet, cooking until browned on all sides, about 3 minutes. Add tomatoes; cook stirring until softened. Remove skillet from heat. Stir in half the feta cheese.

Remove pot of orzo from heat. Stir spinach into orzo; drain, reserving 1/2 cup cooking liquid. Add pork mixture, remaining feta and salt; toss together, adding a little cooking water if needed.
