Chicken Fajitas
Ingredients: 1/4 cup kosher salt
1 Tbsp. pepper
1 Tbsp. granulated garlic
1 1/2 lb boneless skinless chicken breast, sliced thin
1/4 cup olive oil
3 Tbsp. fresh lime juice
1 Tbsp. agave
1 clove garlic, crushed
2 Tbsp. rum
1 large onion, julienned
2 Poblano, julienned
1 red pepper, julienned
tortillas
avocado, sliced
Mexican crema or sour cream
Preparation: Combine salt, pepper, and granulated garlic; set aside.
For marinade, combine 1 tsp. of the salt mixture with olive oil, lime juice, agave, garlic, and rum. Combine with chicken in a ziplock bag. Refrigerate 1-4 hours.
Place julienned vegetables in a large ziplock bag. Add 2 tablespoons olive oil and 1 tsp. of the salt mixture. Refrigerate.
Remove marinated chicken and season with salt mixture on all sides. Place on hot grill and cook to 160 degrees internal temperature. Remove, cover with foil and let rest for a few minutes before slicing.
While the chicken rests, place prepared vegetables in a grill pan or basket for about 10 minutes, stirring occasionally, until softened and charred.
Serve in warmed tortillas with avocado and crema.
