Sesame Salmon with Ponzu Sauce     

Ingredients:
4 6 oz. filets salmon
4 Tbsp. sesame seeds, divided
2 cloves garlic, chopped
1 Tbsp. ginger, chopped
1 cup mayonnaise
1 tsp. toasted sesame oil

Ponzu Sauce:
1/4 cup soy sauce
1/4 cup water
1 1/2 tsp. rice wine vinegar
1/8 tsp. red pepper flakes
1/2 inch fresh ginger, minced
1/2 tsp. roasted sesame oil
juice of one lemon

Preparation:
Whisk together all sauce ingredients, set aside.

Preheat oven to 450 degrees on convection setting. Line a baking sheet with foil. Place filets skin side down on foil.

In a small bowl, stir together 2 Tbsp. sesame seeds, garlic, ginger, mayonnaise, and oil. Spread mixture evenly over filets, on all sides except skin. Sprinkle remaining sesame seeds over mayonnaise coating.

Bake 15 minutes until golden brown and fish can be flaked with a fork.

Drizzle sauce over salmon.
