Salmon en Papillote     

Ingredients:
4 6 oz portions of salmon
olive oil
salt
white pepper
4 tsp minced chives
2 tsp minced garlic
4 tsp lemon juice
4 tsp capers, drained and patted dry

Preparation:
Mix the olive oil, chives, garlic, and lemon juice. Preheat oven to 450 degrees.

Tear 4 14x16 sheets of parchment paper and place on flat surface. Place salmon skin side down on paper. Spread seasoned olive oil over top of salmon. Fold paper over salmon, sealing all sides.

Place salmon on a baking sheet. Bake for 7-9 minutes until internal temperature reaches 145 degrees.

In a small saucepan, heat vegetable oil. Add capers and fry for 2 minutes until caper buds are open and crispy. Remove from oil and drain on paper towel.

Transfer salmon to a plate and glaze with olive oil from parchment. Add fried capers to garnish.
