Tomato Dumplings     

Ingredients:
1/2 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped celery
1/4 cup butter
1 bay leaf
1 28 oz can tomatoes w/ liquid
1 Tbsp brown sugar
1/2 tsp dried basil
1/2 tsp salt
1/4 tsp pepper

DUMPLINGS:
1 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
1 Tbsp cold butter
1 Tbsp parsley
2/3 cup milk

Preparation:
In a medium skillet, sauté onion, green pepper & celery in butter until tender. Add bay leaf, tomatoes, brown sugar, basil, salt & pepper; cover & simmer for 5-10 minutes. Meanwhile, for dumplings, combine flour, baking powder & salt in a bowl. Cut in butter. Add parsley & milk; stir just until mixed. Drop by tablespoonfuls into six mounds onto bubbling tomato mixture; cover tightly & simmer for 12-15 minutes or until a toothpick inserted into dumpling comes out clean. Remove & discard the bay leaf. Serve immediately.
