Twice Baked Potatoes
Ingredients: 4 medium baking potatoes
1 cup sour cream
1/2 tsp garlic salt
1 Tbsp dried chives
shredded cheddar cheese
milk
Preparation: Bake potatoes; let cool. Cut a lengthwise slice from the top of each baked potato; discard skin from slice. Gently scoop out each potato, leaving a thin shell; put pulp in bowl. With an electric mixer on low speed beat potato pulp. Add sour cream, garlic salt, chives & cheese; beat until smooth. If necessary, add 1-2 Tbsp milk to make desired consistency. Season to taste. Pile mashed potato mixture into potato shells. Place in baking dish; bake at 425 for 20-25 minutes or until lightly browned.
