Mini Irish Soda Breads
Ingredients: 16 oz cake flour
1 tsp. baking soda
1 tsp. salt
1 2/3 cup buttermilk
Optional:
Pepitas, chopped
Caraway seed, crushed
Dates, chopped
Preparation: Preheat oven to 425 degrees. Combine all dry ingredients in a large mixing bowl. Pour in buttermilk and gently mix with your hands. Turn sticky dough onto a table top and knead for about 5 minutes.
Divide into muffin tin, score an "X" into the top of each. Cover with another muffin tin while baking. Bake 12 minutes covered, then remove cover and bake another 5 minutes.
For a loaf, shape into a large, round disc. Score an "X" across the top. Bake 30 minutes in a covered dutch oven. Remove the lid and bake another 15 minutes.
