Greek Lemon Cauliflower Rice
Ingredients: 1 pkg cauliflower rice, frozen
Extra virgin olive oil
1/2 onion, chopped
1 garlic clove, minced
Juice of 2 lemons
Zest of 1 lemon
1/2 cup chicken broth
2 Tbsp. fresh parsley, chopped
1 Tbsp. fresh dill, chopped
Preparation: Heat olive oil in sauce pan. Add onions and cook for 3-4 minutes until translucent. Add garlic and cook for a bit. Add lemon juice and broth, bring to a boil then reduce to simmer until reduced and thickened.
Prepare cauliflower rice according to package directions. Stir into lemon juice mixture, add parsley, dill weed, and lemon zest.
