Focaccia
Ingredients: 2 cups warm water, 105-110 F
2 tsp. instant yeast
2 tsp. salt
4 cups bread flour
5-7 Tbsp. olive oil, divided
fresh rosemary
lemons, sliced thin
kosher salt
Preparation: Combine yeast, salt, and warm water in mixer bowl. With dough hook on low speed, add flour, a little at a time. Mix in 2 Tbsp. olive oil then mix well, dough will be very sticky.
Turn dough into a large oiled bowl. Cover and let rise for 40 minutes to an hour in a warm place.
Preheat oven to 425 degrees.
Press the dough out on a well oiled baking sheet. Using your fingers, ease dough to cover baking sheet. Then poke the bread surface all over. Spread 2 Tbsp. olive oil over dough.
Arrange herbs and lemon over dough, sprinkle with coarse salt. Bake 18-25 minutes until lightly golden.
*Tip: To proof dough, place a skillet on the bottom rack in oven, add boiling water. Place bowl with dough above skillet and close door.
