Grilled Pork Chops with Herb Butter     

Ingredients:
4 cups warm water
3/4 cups brown sugar
3/4 cups kosher salt
1 tsp. black peppercorns, lightly crushed
1 tsp. coriander seeds, lightly crushed
3–4 sprigs fresh thyme
4 cloves garlic, smashed and peeled
1 lemon, sliced
4–6 bone-in, thick pork chops
Kosher salt and freshly ground black pepper

Herb Butter:
4 tbsp. unsalted butter, softened
1 bunch fresh chives, minced
1/4 bunch fresh parsley, minced
2 Tbsp fresh rosemary, chopped
1 tsp lemon pepper
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper

Preparation:
In a large bowl, combine water, brown sugar, and salt and whisk until completely dissolved. Add to a large ziploc bag with peppercorns, coriander seeds, thyme, garlic, lemon slices, and pork chops. Seal and refrigerate for 1 hour.

Combine herb butter ingredients. Shaped into a log and refrigerate until ready to use.

Preheat a charcoal or gas grill to medium-high heat. Remove the pork chops from the brine, pat dry completely with paper towels. Season with salt and pepper and grill.

Once the chops are fully cooked, remove from the grill and top each with a pat of herb butter. Let rest for about 5 minutes before serving.
