Blackened Mahi-Mahi Tacos
Ingredients: 4 mahi-mahi fillets
1 tbsp olive oil
1 tbsp blackening seasoning
1 cup fresh pineapple, diced small
1 cup shredded red cabbage
1/4 cup fresh cilantro
juice of 1 lime
pinch of salt
1/2 cup Greek yogurt
2 tbsp coconut cream
zest and juice of 1 lime
1 tsp honey or agave
pinch of salt
8 small corn or flour tortillas
lime wedges for serving
Preparation: Preheat oven to 425F. Coat mahi-mahi in olive oil and rub generously with blackening seasoning and salt. Place on a lined sheet pan. Bake 10 minutes until the edges are charred and the fish flakes cleanly.
Toss pineapple, red cabbage, and cilantro with lime juice and salt. Let sit 5 minutes.
Whisk together Greek yogurt, coconut cream, lime zest, lime juice, honey, and salt until smooth.
Warm tortillas on a gas flame or dry skillet. Break mahi into chunks, load into tortillas with pineapple slaw on top, and drizzle generously with coconut-lime crema. Serve with lime wedges.
