Filipino Lumpia
Ingredients: 1 pound ground pork
1/2 pound shrimp, minced
3 Tbsp. garlic, minced
1 small carrot, minced
1 small yellow onion, minced
3 Tbsp. soy sauce
1/2 tsp. salt
1 pack lumpia or spring roll wrappers, defrosted
Canola oil for frying
Preparation: Using hands, mix pork, shrimp, garlic, carrot, onion, soy sauce, and salt. Form a heaping spoonful of mixture into a skinny log on bottom corner of wrapper. Fold bottom edge of wrapper tightly over the filling. Roll the wrapper around filling once, then tightly fold in left and right corners toward filling. Continue tightly rolling wrapper around filling until only a small triangle remains. Brush water on the triangle and finish rolling to seal.
Heat oil to 325 degrees. Carefully add lumpia in batches, taking care not to overcrowd. Fry for 3-4 minutes until golden brown and filling is 165 degrees. Remove from oil and drain on a pan lined with paper towels.
