Filipino Pancit Canton     

Ingredients:
2 Tbsp. canola oil
2 cloves garlic, minced
1/2 red onion, sliced
4 oz. chicken breast, chopped
2 dried shiitake mushrooms, soaked and thinly sliced
2 Tbsp. soy sauce
1 Tbsp. fish sauce
1 1/2 cups chicken stock
4 oz. shrimp, peeled and deveined
1 carrot, julienned
8 oz. pkg pancit canton
4 oz. napa cabbage, sliced thin
2 green onions, chopped
1 lime

Preparation:
Saute garlic and onion over medium high in a large pan or wok. Add chicken, cook through.

Stir in soy sauce, fish sauce, and mushrooms, then add chicken stock and bring to a boil. Add carrots and cook until slightly softened. Add shrimp and cook for 2 minutes.

Add cabbage and noodles and allow to soften while stirring well. Garnish with green onions and serve with lime wedges.
