Beef Roast
Ingredients: 1 1/2 pound boneless beef chuck eye roast or eye of round roast
4 medium potatoes, quartered
2 cups baby carrots
1/2 tsp. dried basil, crushed
1/4 tsp. salt
2 cans condensed cream of mushroom and roasted garlic soup
Preparation: Spray an unheated skillet with nonstick cooking spray. Add meat and brown on all sides. Place unpeeled potatoes, mushrooms, carrots, and basil in crock pot. Place browned meat on top of vegetables. Sprinkle with salt. Pour soup over meat. Cover and cook on low-heat setting for 10-12 hours.
