Granny Feather's Chocolate Cake
Ingredients: 1 3/4 cups flour
2 cups sugar
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
3/4 cup Dutch process cocoa
1 tsp. salt
1/2 cup oil
1 cup buttermilk or milk
2 eggs
1 Tbsp. vanilla extract
1 cup boiling water
3/4 cup heavy cream
6 oz. semisweet chocolate, broken or chopped
1 Tbsp. sugar
Preparation: Preheat oven to 350 degrees. Grease and flour Bundt pan.
Combine dry ingredients, then add eggs, buttermilk, oil, and vanilla. Beat on medium speed 2 minutes. Stir in boiling water.
Bake at 350 degrees for 45-50 minutes. Cool on wire rack 10 minutes, then invert onto plate.
For ganache, in a medium saucepan stir together cream, chocolate and sugar on low heat until the chocolate is completely melted, and the mixture is smooth. Cool and pour over cake.
If using 9x13 pan, bake 35-40 minutes.
