Chicken Alfredo Rollups     

Ingredients:
6-8 lasagna noodles
2 1/2 cups alfredo sauce (jar or homemade recipe below)
2 cups cooked, shredded chicken
2 1/2-3 cups shredded mozzarella cheese

Alfredo sauce:
1/4 cup butter
1 cup heavy cream
1 1/4 cup grated or shredded Parmesan cheese
1/4 cup parsley, if desired
garlic powder, to taste preference

Preparation:
Alfredo Sauce:
Melt butter in a saucepan over medium heat. Add cream. Simmer for approximately 5 minutes. Whisk in cheese and garlic powder. Heat thoroughly. Stir parsley.

Preheat oven to 350 degrees. Spray 8 inch baking dish with non stick cooking spray. Boil lasagna noodles for 8-10 minutes. Drain noodles and rinse under cold water. This will help from them sticking together. Spread approximately 1-2 tablespoons of sauce on each noodle. Spread an even amount of shredded cheese and chicken on each noodle. About 1-2 tablespoon each ingredient. Roll up lasagna noodle carefully and place seam side down in prepared dish. Pour remaining alfredo sauce on completed roll ups in pan. Top with remaining cheese. Bake for 30 minutes or until cheese is melted.
