Susan's Enchilada Sauce     

Ingredients:
Green chiles (Anaheims or Sonorras)
Water
Onions
Garlic
Roux

Preparation:
Dry green chiles. Cut the top off and put the whole thing in a pot of water with onions & garlic. Then boil for a couple hours until they're tender and then puree. Make a roux and mix in the chile mixture.
