Salmon Patties     

Ingredients:
1 can pink salmon
3 eggs
handful of crushed saltines
salt & pepper to taste

Preparation:
Mix all ingredients thoroughly. Form the mixture into a large ball, then divide into four equal portions. Form patties about 1/4-1/2 inch thick. Spray skillet with nonstick cooking spray and preheat over medium heat. Cook the patties until browned and crispy on the outside and warmed through, about 4 minutes per side.
